Our Chefs and owners come from a family of restaurateurs that have been in the industry for over 50 years. The love and dedication for the Latin Culture is shown through the variety of dishes, proudly representing the Latin community in Wisconsin in our dining room and through our premier catering services.

Mendieta-Ramos, MBA, CPCE - Owner & Catering Director
Growing up with two professional chefs as parents, it was impossible not to love the restaurant industry. Her father Jose Mendieta was a chef for 50 years before retiring in 2008, and her mother Chef Elvira Prado continues to cook at Antigua. Citlali learned to cook from her parents, but the passion for serving in the industry comes from within. While Citlali was in school, she worked for about 10 years with her parents. During those years, Citlali worked all positions in the restaurant to gain a good understanding of the business.
Antigua is Citlali's dream come true. A lot of love, dedication and effort were put into opening the restaurant. Everything from the logo (which is Citlali's handwriting), menu, and decor was inspired by her experiences growing up in the industry. While she enjoys cooking and visiting tables in the dining room, she loves even more to cater special events.
Some of Citlali’s mentors through the years include chocolatier Max Brenner, even planer David Tutera, Preston Baily, the late catering guru Mike Roman, The Placencia Family of restaurateurs, among others. She has a degree in Information Resources from the University of Wisconsin-Milwaukee, and a Master’s in Business Administration from Alverno Collegue. She is a certified Servsafe instructor and exam proctor for the National Restaurant Association. Recently, Citlali received
the Certified Professional in Catering and Events (CPCE) designation from the
National Association for Catering and Events. The
CPCE is awarded after a rigorous study period and written exam that covers accounting,
beverage management, catering services, contracts and agreements, event
management, food production, human resources and sales and marketing.
Citlali has attended workshops and seminars all across the United States, at reputable institutions such as Sullivan University, Kendall College, and the Art Institute. Citlali serves on the Industry Advisory board for the Art Institute of Wisconsin, the West Allis West Milwaukee Chamber of Commerce, and the West Allis West Milwaukee School District Education Foundation.
Nicolas Ramos - Chef and Owner
Married into a family of restaurateurs, Nicolas fell in love with the industry. His in-laws have been his mentors as he grows his culinary knowledge and skills. He is a self-taught chef, but has had the opportunity of working under the leadership of world known Chef Charlie Trotter in Chicago, and be mentored by Chef Jose Andres. To stay competitive and up to date, Nicolas has attended a number of workshops and seminar all across the United States, at reputable institutions such as Sullivan University, Kendall College, and the Art Institute, and the French Pastry School in Chicago.
Chef Nicolas has been featured in local newspapers, has participated in food festivals, and done a number of presentations on TV, and along the Milwaukee metro area. He also teaches some of the hands on cooking classes at Antigua, and serves on the Industry Advisory board for the Art Institute of Wisconsin.
